Easy Creamy Celeriac Soup

1 tablespoon butter
1 onion, sliced
1 clove garlic, minced (optional)
2 potatoes, peeled and diced
2 large celeriac - peeled and diced.
1/2 cup cream
DIRECTIONS

In a large pot or casserole dish, add the olive oil and melt the butter over medium heat.

Add the onion and allow to sweat gently until soft and translucent. Add the garlic and cook for another minute.

Add the potatoes and celeriac and stir to coat everything in the delicious flavour of the onions and garlic.

Add the chicken or vegetable stock and bring to a boil. Reduce the heat and simmer partially covered for 30-40 minutes.

Carefully puree the soup in blender or food processor and pour back into the pot once smooth.

Add the cream and gently re-heat. Season to taste with salt and pepper and serve in heated soup bowls with warm crusty bread. Garnish with fresh celery or parsley leaves.

TIPS

*If you don't want potato you can substitute it for extra celeriac or sweet potato.
*If you can't find celeriac - cauliflower will be equally delicious!
*You can make this vegan-friendly by using coconut cream instead of cream.
