Cauliflower & Butter Bean Soup

INGREDIENTS
1 tbsp unsalted butter
1 medium onion, diced
1 small clove of garlic, crushed
600g cauliflower, broken into smaller pieces
1 large potato, finely diced
2 tbsp NOMU Vegetable STOCK, stirred into 1 litre of boiling water
1 tin (400g) butter beans, drained & rinsed
NOMU Sea Salt
NOMU Black Pepper
DIRECTIONS

Melt the butter in a large pot over a medium heat. Add the diced onion and garlic and sweat the onions until soft and translucent.

Add the cauliflower and potato and gently sauté for 2 minutes while stirring. Add the vegetable STOCK to the boiling water and stir. Strain the stock through a fine sieve and add to the vegetables.

Add the butter beans, bring to the boil then reduce the heat and simmer for 20 minutes.

Carefully pour the soup into a blender or processor and blend until smooth. Reheat if necessary and check the seasoning.

Serve hot with freshly baked Dinner Rolls and farm butter.
