Brown Rice Salad with a Basil Pesto

INGREDIENTS
5 large carrots, peeled and roughly chopped
¼ cup finely chopped coriander
3 tbsp NOMU Extra Virgin Olive Oil
2 tsp NOMU Ground Cumin
1 tsp NOMU Spanish Smoked Sweet Paprika
½ tsp NOMU Ground Turmeric
1 cup brown rice
1 ¾ cups water
½ cup raisins
2 tbsp toasted pine nuts
large handful of parsley leaves, roughly chopped
crumbled feta, to serve
DIRECTIONS

Preheat oven to 200°C.

Place all ingredients except the rice into a bowl, and combine thoroughly. Spread the mix onto an over tray and roast until everything is soft and golden brown. Set aside to cool.

Cook the brown rice as per the package instructions, drain and leave to cool slightly.

Combine the vegetables and rice gently in a large mixing bowl, and serve with our easy basil pesto.
