   Tracy's Tips

  • Grind generously into softened butter to rub generously all over a whole free-range chicken before roasting in the oven.  For added succulence, carefully lift the skin over the breasts and smother with butter.
  • Grind onto cubes of skinless, de-boned chicken thighs, coated with olive oil,  before skewering onto twigs of rosemary to grill or bbq.  Serve with garlic aioli.
  • Grind over slivers of chicken breast before char-grilling in a griddle pan.  Add to a rich basil and tomato sauce for your favourite pasta!
