- I kg of potatoes weighed
- before peeling
- 1 onion, diced
- 2 garlic cloves chopped very fine
- 2 tsp NoMU One for All
- 6 eggs
- 150 ml mild olive oil
- 250 ml milk (optional)
- NoMU Just Salt Grinder
- NoMU Just Pepper Grinder
Tortilla de patatas
Peel and slice the potatoes into fairly chunky cubes or slices. Using a heavybased non-stick pan, heat the olive oil before adding the onions, potatoes and the garlic.
Lower the heat and cook, turning occasionally, until tender and beginning to brown slightly on the bottom. (The potatoes should be covered in oil.) Remove from the stove and strain really well.
In a large bowl whisk the eggs, milk, NoMU One for All, salt and pepper. Add the potato mixture and mix.
Put 1-2 tbsp of the olive oil back into the pan and add the mixture. Lower the heat and allow to set and brown on one side before turning with the help of a lid or a plate.
Continue turning until the tortilla is just set and both sides are browned to your liking. Turn out onto a plate and serve hot, warm or even cold in tapas sizes or as a meal with a salad and some crusty bread!
Wine suggestions
Pétalos del Bierzo 2005. A superb choice made following the biodynamic cycles of nature from Castillian Spain. It’s great value for such a great quality wine. Fruity and light with plenty of minerals that will pair well with tortilla. If you are splashing out, Guigal Còte-Rôtie Syrah from one of the most amazing areas of the Rhone valley. A real treat!
