In a large saucepan heat the oil and sauté the onions until lightly golden. Add the garlic and Pork Rub and sauté for another minute or two. Add the rest of the ingredients and bring to a simmer, stirring to dissolve sugar. Add the reduced Jack Daniels and cook for a few more minutes.
Remove from the heat and blend in a blender until smooth. Check the seasoning and adjust to taste.
Place the ribs in a baking dish and smother with the BBQ sauce. If you have time, leave to marinate for a few hours or overnight. If not, cover with foil, place in pre-heated oven at 160ºC for 1 hour.
Remove the foil, increase the temperature to 200ºC and place back in the oven for another 15-20 minutes until the ribs look browned and gooey!
Grab a bib and finger bowl and get stuck in!
