Griddle or toast your bread until slightly charred. Spread with good quality humus and top with slivers of avocado. Sprinkle with Eqyptian Dukkah and top with some fresh rocket. Drizzle with olive oil and freshly squeezed lemon juice.
Slice your block of haloumi cheese in half then slice each half horizontally into 3 slices. Sprinkle both sides of each slice generously with NoMU One for All. Heat a pan and add a drizzle of olive oil. Fry the cheese briefly on both sides (15-20 seconds) until golden brown and remove from heat.
To finish off your sandwiches, top with the warm melting haloumi and serve immediately.
