- vine-ripened tomatoes (at least 1 per person)
- a drizzle of extra-virgin olive oil
- 1 tbsp NoMU One for All Grinder
- Or NoMU Veggie Rub
- or NoMU Provencal Rub
- NoMU just salt
- NoMU just pepper
Oven roasted vine ripened tomatoes
After going up Table Mountain on a Sunday morning, we often treat ourselves to a late lazy brunch before kicking back and reading the newspapers. A critical part of the experience is oven-roasted,vine-ripened tomatoes, preferably organic as the flavour is so much better
Slice the tomatoes in half and place cut side up on a baking tray.
Drizzle with olive oil and sprinkle with One for All or the rub of your
choice.
Season well and bake in a pre-heated oven (200°C) for 20-25 minutes.
