Preheat the oven to 180°C
Place the butternut on an oven tray. Drizzle with olive oil, sprinkle with the Rub of your choice, season with salt & pepper to taste and toss till well coated.
Roast in the oven for 40 minutes, turning the slices over half way through. You want the butternut to be soft on the inside but with deliciously crispy caramelised edges!
