Sauté the onion in some olive oil with a pinch of NoMU Just Salt until soft and translucent. Add the garlic and ginger and cook for 1-2 minutes. Add the NoMU Moroccan Rub and cook until fragrant. Stir in the rice and pour in the prepared NoMU Vegetable stock. Stir in the honey and orange zest.
Bring to the boil, cover then reduce to a simmer and cook for about 40 minutes until the stock has been absorbed and the rice is cooked. Stir in the dukkah, dried apricots, pomegranate seeds and coriander.
