Moroccan aubergine with pine nut, sultana and coriander dressing
Slice your aubergines into 1/2cm pieces. Brush with extra virgin olive oil and your NoMU Moroccan Rub, season with NoMU Just salt and pepper. Fry them gently in olive oil until golden brown and set aside.
Using the same pan add 2 table spoons of extra virgin olive oil and your pine nuts, roast these until they become a gentle brown. Add a further table spoon of NoMU Moroccan Rub, continue to fry until pine nuts are a dark golden colour. Add 3-4 table spoons of sugar and 3-4 table spoons of red wine vinegar, reduce until the sauce becomes syrupy. Stir in a little olive oil and check for seasoning.
Drizzle the pine nut sauce over the aubergine. Crumble some goats cheese over that and top it all off with some coriander.
TIP: If you don’t like goats cheese, you can use feta cheese, or any other cheese that crumbles.
