Cut the feta into squares about 2 cm wide. In a mixing bowl, mix the feta with the lemon zest, Provençal Rub, caperberries, black pepper and then cover with the olive oil. For best results allow to marinate overnight before using the feta. This is so good either as part of a mezze platter or an anti pasta platter together with some really good bread and olives of course! But please be tempted to try the feta in salads like our risoni salad or also pair the feta with pasta or chicken.
Makes enough feta to fill a 500 ml glass jar.
