  • 1 cup light brown sugar
  • 3 tsp Hot English mustard powder
  • 1 cup maple syrup
  • Juice and zest of 2 oranges
  • 2 cinnamon sticks
  • 2 fresh bay leaves
  • 1 tbsp NoMU Pork Rub
  • 2 whole star anise
  • 5 whole cloves
  • 5 whole pepper corns

Maple and Orange Gammon Glaze and Turkey Rub


Maple and Orange Gammon Glaze:

Place the brown sugar, mustard powder, maple syrup and orange juice in a pot on the stove, stirring to combine. Slowly bring the mixture to the boil, stirring to dissolve the sugar.  Add the Pork Rub, cloves, peppercorns, cinnamon, bay leaves, star anise and orange zest and stir to combine.  Allow to cool and infuse or decant while hot into a clean, clear jar of your choice.

Turkey Rub:

For this we recommend you take either our NoMU Roast, Poultry or One for All Rub which you can leave as is or place in a small clear jar, with a homemade label as a personal touch. 

To give this as a gift: Wrap the bottle and a basting brush in tissue paper and place in a paper bag with a square base. Add padding if necessary to stabilize the bottle.  Fold the top of the bag over and secure by sewing it closed, taping it down or stapling it closed. Punch a hole in the middle at the top, lace ribbon through and tie. Attach a card the same way.
