Lemon & maple chicken with soy sauce and nomu barbeque rub
Season the chicken pieces with salt and pepper. In a good quality sauté pan, add a dash of oil and brown the chicken pieces over high heat. It would be better to do this in 2 batches. When all the chicken is golden brown, place all the pieces back in the pan, together with the garlic and barbeque rub. Mix really well making sure the chicken is nicely coated in all the spices.
If the chicken starts to burn, reduce the heat.
Add the soy sauce, maple syrup, slices of lemon and hot water to the pan.
Allow the liquid to simmer away until it has reduced by half and has become quite sticky. This will take about 20 minutes in which time the chicken will be cooked through.
Serve at room temperature with lots of napkins!

Wine suggestions
There’s a lot of big flavour in this recipe but the soy and barbeque rub tip the balance in favour of a super-fruity red such as the Excelsior Merlot 2006.
