Honey Butter
Cut the butter into chunks, place in a mixing bowl and allow to soften at room temperature.
Beat the butter until light and fluffy and pale in colour.
Add the vanilla and drizzle in the honey.
Beat until well combined. Using a baking spatula, remove the butter from the bowl and spoon onto parchment paper or plastic wrap.
Roll into a log and refrigerate for an hour or 2 until set.
Delicious served on hot toast, hot cross buns, croissants or hot cakes.
