200g rolled oats
50g desiccated coconut
100g hazelnuts, roughly chopped
50g flaked almonds
75g NoMU Hot Chocolate Chunks
½tsp NoMU Sweet Rub
1 tsp NoMU Vanilla Extract
250ml honey
80g soft brown sugar
125ml vegetable oil
Preheat the oven to 130°C.
In a large mixing bowl, combine the oats, the coconut, the hazelnuts, the almonds, and the NoMU Hot Chocolate Chunks, Sweet Rub and Vanilla Extract.
Place the honey, the sugar and the oil in a small saucepan over low to medium heat. Allow the honey to melt and the sugar to dissolve, while stirring frequently. Pour this warm honey mixture into the bowl with the combined dry ingredients. Mix together well, making sure that the chocolate, nuts and coconut are evenly distributed. The heat from the honey will melt the chocolate, making the mixture a chocolate brown colour. Pack the mixture into a brownie tray and pat it down so that it is compact, even and level. Place the tray into the oven for 50 – 60 minutes, until the oats has darkened slightly. Cut into squares or bars while it is still warm and then leave to cool and harden slightly on a wire rack.
