  • 1 small purple cabbage
  • 1 small green cabbage
  • 1 apple
  • juice of 1 lemon
  • ½ cup homemade mayonnaise
  • 1 red onion, thinly sliced
  • large handful Italian parsley, chopped
  • ¼ cup sultanas
  • NoMU Just Salt
  • NoMU Just Pepper

 

 

 

Coleslaw

I think Coleslaw has had a bad rap for long enough! If you use good mayo, it is really healthy, crunchy and delicious. Add thinly sliced baby fennel or capers for added character. Thinly slice or shred the cabbages and place in a large bowl. Peel and grate the apple and immediately cover with lemon juice to prevent browning. Add to the cabbage along with the sultanas, red onion and Italian parsley. Add the mayonnaise and mix well. Season to taste with NoMU Just Salt and Just Pepper and refrigerate until required.
