  • 4 slices artisan sourdough bread
  • 2 cloves garlic
  • Extra virgin olive oil
  • 1 red onion, sliced
  • 1 tbsp NoMU Spanish Rub
  • 250g chorizo sausage, sliced
  • 1 tin butter beans, drained
  • ½ cup Italian parsley leaves

Chorizo butter bean tapas


Char-grill the bread on both sides, rub lightly with a clove of garlic and drizzle with olive oil.

Heat olive oil in a pan and fry the onion until translucent.

Add NoMU Spanish Rub and chorizo and fry for 5 minutes.

Add the butter beans and fry until everything is well coated and the butter beans are heated through.

Toss in the parsley leaves and stir through.

Pile generously onto each slice of char-grilled bread and serve while hot.

Wine suggestions

One of my choices to go with the spiciness of the sausage and garlic flavours in this dish is the Madurado 150 Dias 2003. It is from Spain's most famous and oldest wine region of Rioja, which has managed to create a wonderful modern wine with its new state-of-the-art winery and innovative wine makers. The wine has a wonderful velvety texture with lots of fresh ripe fruit and a hint of spicy oak, which will work really well with this tapas
