  • 2 red & 2 yellow peppers chargrilled

  • 40g Italian parsley, roughly chopped
  • 1 bag of rocket
  • for the dressing
  • juice of 2 limes or enough to
  • make up 1/3 of a cup
  • zest of 1 lime
  • 1 cup olive oil
  • 1 tsp of sugar or honey
