Preheat the oven to 200°C.
Peel and core the apples and cut into bite-size chunks. In a heavy-based saucepan, melt the butter over medium heat. Stir in the sugar and the NoMU Sweet Rub (along with the cinnamon stick). Add the apple chunks, stirring to combine the apples and sugar and saut for about 5 minutes. The apples should have slightly softened, but still retain their shape. Remove the saucepan from the heat and place the apples and any juices in a clean bowl to cool.
In a mixing bowl or food processor, combine the flour and sugar. Add the chilled butter and either rub into the flour with your finger tips or pulse in a processor until all the butter has been combined with the flour and a fine crumble has formed.
Spoon the apples and juices into 6 small or 1 large baking dish until they are filled to just below the rim. Sprinkle a generous layer of the crumble over the apples and then sprinkle a little NoMU Sweet Rub over the top. Place onto a foil-lined baking tray to catch any juices during cooking and place the tray into the oven for 15-25 minutes, or until the crumble is golden and crispy.
Remove from the oven and serve immediately with a generous dollop of double thick cream or homemade vanilla ice-cream or custard (See NoMU Recipe Mailer #2 for both recipes).
