- 3 cloves of garlic
- 1 egg yolk
- Half a lemon, squeezed
- 250 ml olive oil
- NoMU Just Salt
- NoMU Just Pepper
Allioli
Allioli (from the Catalan all I oli, meaning garlic and oil) is a mayonnaise-like sauce that accompanies BBQ's, paellas and potato dishes like patatas bravas. Traditionally it contains only olive oil and garlic and is made in a mortar and pestle.
Peel the garlic cloves and squash to a paste with the blade of a knife. Place in a blender or processor with the egg yolk, a pinch of salt and the lemon juice.
Switch the blender on using a low speed and add your oil slowly by drizzling it in little by little until all the oil is absorbed.(If you add the oil too quickly it will curdle!) Add some NoMU Just Pepper and a little more salt if required.
Makes 300 - 350 ml
