Whip your cream and vanilla paste to soft peaks. Place a scoop of ice-cream in a small bowl or glass. Working quickly to ensure minimal melting, pour over the coffee, top with whipped cream and sprinkle with chocolate chunks or cocoa. Serve immediately with Italian biscotti or shortbread!
