tracy's tips

  • Coat a thick mature sirloin steak with a smudge of olive oil to sear in a hot griddle pan.  Allow to rest before slicing onto a platter, drizzle with more extra virgin and garnish with wild rocket and shaving of parmesan.
  • Grind over large brown mushrooms with a dollop of butter and a sliver of garlic before grilling in a hot oven or charring over coals.
  • Combine with olive oil and garlic in a bowl.  Tie together a few sprigs of rosemary to baste juicy lamb cutlets over the coals.
